Walnut Sauce

A big dollop of this will transform any pasta, chicken … you name it.

I found this particular brand at Eataly in Dallas, and as I love to add crunchy walnuts to pasta, it seems like something I’d want to try.

After some research, I discovered that this is a staple in Italian cooking, namely used in a dish called trofie con salsa di noci alla Genovese in Italy, and dates back to Ancient Rome.

How I didn’t discover this recently in Rome is a mystery to me, but this will be a go-to for now on.

Of course you can always make your own as well.

A little goes a long way, and you can thin it out a bit using pasta water. Top it with (even more) parmesan cheese, and you have an incredibly deep and complex pasta - no meat required.
